Ingredients
1 leek
½ head cabbage
1 spring onion
1 carrot
1 courgette
1 serve veggie stock
2 tablespoons curry powder
1 teaspoon cumin
1 tablespoon brown sugar
1 tablespoon sweet chilli sauce
1 tablespoon soy sauce
2 cups of water
Lots of salt and pepper
Any spice your heart desires.
500g plant mince
1 pack vermicelli noodles
Method
Slice all the veggies
Put everything in the slow cooker except the plant mince and the noodles
Cook on low for 4-5 hours
Add plant mince to the slower cooker for the last 20 minutes or so (as it doesn't need very long to cook)
Cook the vermicelli noodles in hot water for 3-5 minutes
Drain the cooked noodles and add to slow cooker
This meal is so easy and so yummy and will last for days
This is an adaption of the Chinese Amercian dish Chop Suey
